In 1970 Guy Bouvet, Antoine’s grandfather launched his domaine in Mareuil sur Ay and ran it largely by himself, with most of the 5 hectares being sold to Bollinger. Guy worked with a small holding of vineyards spread across three villages (Mareuil sur Ay, Avenay val d’Or and Bisseuil). From an early age, Antoine took a budding interest in the family business. He learned from his grandfather the joy of hard work, caring for the land, and the precision of cellar work so very necessary to make great Champagne. Antoine’s love for his grandfather can be seen in the homage to him on the label of his Champagnes.

Antoine attended the Viticampus in Avize and started working with his grandfather in 2011 and in 2013 he took over complete operations of the domaine, where he has worked solely with oak and began the use of biodynamic practices. With working with his grandfather in the first couple of years, it has been a transition to organic vineyard practices and in 2012 and 2014 both were planted on 40% organic vineyards, while 2020, and going forward all vineyards are farmed 100% organic and biodynamic throughout."

"Cyril produces a separate cuvee from the estate’s oldest and best-exposed vines closest to the chateau itself. As of 2016, the vines for the “Chateau du Nozay” are 45 years old, and while the wine possesses the same almost Chablis-like carriage as the “Domaine” bottling above, the intensity and depth are noticeably ratcheted up here. While it’s still lean and punchy, the vines’ diet of more sun and deeper subsoils reveals itself in a glimmer of glycerol succulence on the mid-palate and a rounder, longer finish. A certain density that still avoids any sense of heaviness suggests the possibility of interesting cellar development, and for those inclined to allow the Sauvignon’s youthful exuberance to subside and let the limestone shine through, this will prove a very rewarding purchase. I have tasted it many times over the years in various trial disgorgements and it has never been anything less than compelling. The final, finished wine captures all of that potential. "Bourgogne “Chaumes des Perrières” has an interesting history, as up until the late-1970s, this lieu à dit above the premier cru of Perrières in Meursault was entitled to Meursault villages status. Raymond Dupont-Fahn’s grandfather, Michel, had bought a parcel here in 1975 and petitioned the INAO to add twenty centimeters of top soil to his unplanted parcel, as the topsoil was so thin that he feared new plantings here would wither and die. The INAO agreed, but the other growers in Meursault were upset and petitioned to have the parcel declassified to Bourgogne from Meursault AC, which they were also successful in doing. "There is a bit of an animal hint on the nose of the 2018 La Vizcaína El Rapolao, which Raúl Pérez tells me is always part of the character of the wine when it's young. They finally bought the vineyard in 2018, and the change in viticulture resulted in lower yields: they produced 6,000 bottles of this 2018, compared with the 10,000 bottles of the 2017. They have bought three more plots for this bottling, so volumes will grow in the future. The initial sensation fades after the wine has been in bottle for one hour, and it makes sense that it's gong to disappear with some more time in bottle. "Marsanne(51%) is the dominant grape variety complemented by Clairette Blanc (31%) and some Ugni Blanc (18%). The vineyards to produce the white wine at Bagnol cover a bit less than 9 hectares and are planted on a gentle slope of clay and limestone soil with a north – northwest exposure. After a manual harvest, the grapes are destemmed and pressed; the fermentation continues for three weeks in cement cuves at a temperature controlled 18 degrees Celsius; the wine is vinified completely dry. The malo-lactic fermentation is blocked to preserve the freshness of the wine and the wine is normally bottled at some point between May and July of the following year. "The new release of Champagne Doyard’s “Cuvée Vendémiare” non-vintage Blanc de Blancs Brut is from the base year of 2014, though this only comprised fifty percent of the blend. The remainder is thirty percent from 2013 and twenty percent from the vintage of 2012. Only fifteen percent of the vins clairs go through malo, with the forty percent of the wines raised in older Burgundy barrels prior to bottling up for secondary fermentation. It was aged sur latte for fifty-six months and finished with a dosage of four grams per liter. The wine delivers a superb nose of pear, golden delicious apple, chalky minerality, crème patissière, spring flowers and just a hint of buttery oak. On the palate the wine is brisk, full-bodied, focused and complex, with a rock solid core of fruit, superb mineral drive and cut, refined mousse and a long, perfectly balanced and extremely promising finish. "The 2019 Troplong Mondot is a blend this year of 85% Merlot, 13% Cabernet Sauvignon and 2% Cabernet Franc, harvested from the 10th to the 25th of September. The pH is 3.55—pretty incredible when you consider the alcohol is nearly 15%! I hasten to add that from tasting, I would have guessed this was 14.3% to 14.5% alcohol. It is the kind of wine with so much energy it practically does pirouettes on your palate. Opaque purple-black colored, the nose is fantastically floral, bursting from the glass with notes of candied violets, red roses and lavender over a core of plum preserves, wild blueberries and black raspberries with touches of garrigue, tilled soil, wild fungi and crushed rocks plus a waft of powdered cinnamon. The medium-bodied palate is like a tightly coiled spring, featuring beautifully knit layers of black and red fruits, earth and floral notes within a firm, fine-grained frame and bags of freshness, finishing long and mineral laced. This is a far cry from the old-school style of Troplong Mondot from a few years back, and it is incredibly impressive. "The 2019 Pichon-Longueville Baron is a blend of 87% Cabernet Sauvignon and 13% Merlot, harvested from the 18th of September to the 11th of October. It is being aged in French oak barrels, 80% new, for 18 months. This grand vin represents 49% of the harvest. Very deep purple-black in color, the nose skyrockets from the glass with vibrant scents of freshly crushed blackberries, black raspberries and blackcurrant pastilles followed by perfumed sparks of fragrant earth, clove oil, lilacs, crushed rocks, molten chocolate and cinnamon toast. Medium to full-bodied, the palate is packed with layer upon layer of black fruit, mineral and exotic spices, framed by beautifully ripe, finely-grained tannins and tons of freshness, finishing with a lingering soft-spoken whisper of floral and earth notions.
