"The 2018 Schoffweg "Le chemin des brebis" offers a pure, rich and intense, very elegant and concentrated bouquet of crushed limestone rocks and lemon peels. Fresh and elegant, dense and refined yet full-bodied, tight and complex on the palate, this is a very salty Schoffweg with a promising, finely bitter finish. This is still far too tight and young to be served now, even from a big glass, but it's a promising white in the Burgundian style. The cuvée includes a part that was fermented on the mash in clay amphora. 13.9% stated alcohol. Natural cork. Tasted at the domaine in May 2022." 94 Stephen Reinhardt, Wine Advocate

The nose on the current offering is flat out outstanding, as it jumps from the glass in a blaze of blood orange, fraises du bois, chalky minerality, warm biscuits and a topnote of orange peel. On the palate the wine is deep, full-bodied, crisp and laser-like in its focus, with a tightly-knit personality, a great core of fruit, very refined mousse, and superb length and grip on the perfectly balanced finish. Surface Area: From multiple vineyards, totaling 4.0 ha in all

Vine Age: Planted between 1980 and 1989

Terroir: En Lya: west-facing, shallow clay-silt soil with limestone scree over a deeper layer of Liassic gray marl. Au Calvaire: southeast-facing on a gentle slope, tucked away in a valley, fine limestone scree and clay soil over gray marl. Trémoulette: at the bottom of a west-facing slope, fine limestone scree and clay soil over gray marl.

Viticulture: Sustainable

Vinification: Varieties are vinified and aged separately, 5% of the chardonnay is further separated and aged sous voile. Pressed with whole clusters with a pneumatic press. Ambient yeast fermentation, malolactic conversion and aging for 18 months in used barrels. Blended and aged for an additional 18 months in tank. Fined with bentonite and casein, lightly filtered. First SO2 addition during aging, 0-30 ppm free SO2 at bottling.
