"The vineyards for the Saint Estephe of La Peyre are situated in the village of Leyssac in the same zone as that of Montrose and Haut-Marbuzet. There are a total of eight hectares of vines with an average age of 30 years (as of 2011). The soil is predominantly gravel with a mix of clay. The grape mix for the Saint Estephe is 40% Cabernet Sauvignon, 40% Merlot, 10% Petit Verdot and 10% Cabernet Franc. The alcoholic fermentation occurs in stainless steel tanks and then the wine is aged in small oak barrels (about one-third of which is new) for an additional 15 to 18 months before being bottled (without filtration). "In Maligny, a village well-poised between Paris and Dijon, just north of Chablis, Olivier Savary and his wife, Francine, have been vignerons since 1984. Though many of Olivier’s family members were vignerons, an unfortunate series of challenging harvests discouraged his parents from joining the family business. Chardonnay runs strongly through his veins, however, and Olivier pursued wine school in Dijon regardless of the fact that he would have no vines of his own. Olivier and Francine arranged to farm some vineyard land en métayage (share cropping) in the Chablis and Petit Chablis appellations. With his father at his side to farm the complex network of vineyards, Olivier initially sold off the majority of his production in bulk to a négociant. "Cyril produces a separate cuvee from the estate’s oldest and best-exposed vines closest to the chateau itself. As of 2016, the vines for the “Chateau du Nozay” are 45 years old, and while the wine possesses the same almost Chablis-like carriage as the “Domaine” bottling above, the intensity and depth are noticeably ratcheted up here. While it’s still lean and punchy, the vines’ diet of more sun and deeper subsoils reveals itself in a glimmer of glycerol succulence on the mid-palate and a rounder, longer finish. A certain density that still avoids any sense of heaviness suggests the possibility of interesting cellar development, and for those inclined to allow the Sauvignon’s youthful exuberance to subside and let the limestone shine through, this will prove a very rewarding purchase. No single wine in our portfolio is more illustrative of our work than this brilliant rendition of Nebbiolo. Produced exclusively from the Nebbiolo grape planted in a series of vineyards that sit beneath Mont Blanc (Monte Bianco) in a broad amphitheatre with full southern exposure overlooking the river, Dora Baltea, that runs from the snow-capped mountains south through the Valle d’Aosta into the northwestern range of Piedmont slicing the city of Ivrea in half. The vines are trained in a special way on pergola (known as “tupin” in local dialect) to obtain maximum exposure to the sun in this high altitude district and are planted to soils that are dominated by slate. The appellation of Carema is extremely small: only 16 hectares (approximately 40 acres) are planted to the vine. The Ferrando family controls 2.5 hectares of the appellation. The Nebbiolo grapes are harvested normally during the second half of October; then, they undergo a cuvaison of approximately two weeks in stainless steel before being racked into a mixture of large and small barrels for an extensive aging period of 30 to 36 months before being bottled (without filtration). By law, the Carema cannot be released before four years of aging. Production of the Carema “Etichetta Bianca” is approximately 7200 bottles per annum, two-thirds of which (4800 bottles) comes to the States. A small quantity of magnums is bottled each year at our request as well. The Carema of Ferrando reveals the most elegant and delicate and complex characteristics of the Nebbiolo grape with a surprising capacity to age.
