"The village-level Saint-Aubin from Domaine Pierre-Yves Colin-Morey features green apple and grapefruit aromas with spice from the cask fermentation. The texture is silky and round, avoiding any tart or acerbic sensations and lingering on the palate. The grapes are a blend of three parcels from his fifty-year-old vines in the south-facing but high-altitude lieu-dit Le Blanc with a parcel in En Choilles.
