"The pale red 2019 Ojo de Gallo is sold as a rosado, but it's pretty dark and has a profile of a red rather than a white. It was produced with a mélange of grapes, red and white, so in reality it's a clarete; it has moderate alcohol, a somewhat wild profile and a dry and chalk-driven mouthfeel. This feels very different from the 2018, more what I was expecting... It had a slow fermentation of seven months in concrete and barrel with indigenous yeasts and was bottled without added sulfites. 4,000 bottles were filled in May 2020." |
