"A collaboration between Antoine Graillot from Crozes-Hermitage and Raúl Pérez, this Mencía comes from a range of parcels, with a strong focus in Rapolao, one of Pérez’s star vineyards in the Valtuille de Abajo area. It’s rare for mencía in Bierzo to taste this fresh, with so much energy and tension. There are meat and mineral notes, but it’s mostly just delicious, crunchy red fruit, filling the mouth with freshness. "Raúl Pérez crafted this red from a parcel planted mainly to mencía, with some bastardo, garnacha tintorera, doña blanca and palomino in the mix as well. This unusual field blend offers some unusual flavors, with the iodine notes of raw meat and lots of black-pepper spice to the ripe fruit. Raúl Pérez Bierzo Ultreia Godello 2016, 0.75L
Godello from Bierzo, Castilla y León

"There is a new white from Godello, as demand is growing, and they sourced the grapes from a vineyard that produced the first 2016 Ultreia Godello. It's a north-facing plot that is very cold, and the grapes, picked at the end of the harvest, were only 12% alcohol. It fermented in 300-liter barrels and one 2,500-liter oak vat. It feels super young and undeveloped, with an austere nose and a very tasty palate with superb acidity." 92 Points Wine Advocate

Raúl Pérez Bierzo Ultreia Saint Jacques 2017, 0.75L

"The clean, floral and 2017 Ultreia Saint Jacques comes mostly from old vineyards from different soils in Valtuille and Villadecanes fermented in stainless steel and oak vats with part of full clusters and matured in used barriques for one year. It's produced in a fresh and very drinkable way. This is one of the best values from Bierzo and Spain, and a great introduction to Bierzo. "A field blend of Mencia, Alicante Bouschet, Pan y Carne and some white varieties, fermented with natural yeast in old oak tanks using 100% stems and no temperature control. It undergoes malo in tank and then spends one year in old barrels. There's no remontage or pigeage, and he works without sulphites. Raúl Pérez Los Arrotos del Pendon 2015, 0.75L
Prieto Picudo from Tierra de Leon, Castilla y León

"The 2015 Los Arrotos del Perdón is a pure Prieto Picudo from León, from an ancient vineyard. It fermented with full clusters and indigenous yeasts in concrete with a very long maceration, and then it matured in 500-liter oak barrels. It's a lot less aggressive than the majority of Prieto Picudo wines, and it's not as rustic as you might expect, as it was produced inside the cooperative of Villacabriel. Raúl Pérez told me that the secret to tame this variety is to age the wine under a veil of yeasts à la Sherry or Jura, even though it sounds weird. I have heard of other reds aged under flor, but this is the first time I have heard that it not only helps to age the wine and protect it without the use of sulfur but also that it polishes the tannins (it polymerizes them). There you go! It has 13.5% alcohol and a super low pH. A great, unexpected Prieto Picudo. There are 7,000 bottles of it." 93 Points Luis Gutierrez, Wine Advocate

Raúl Pérez Rías Baixas Atalier A Cruz das Ánimas’ 2018, 0.75L

"A Cruz das Ánimas’ (trans. “The Crossroads of Souls”) is nothing short of explosive. It leaps out of the glass with aromas of oyster shell and etherized granite and follows through with a palate rich in marine-inflected yellow and green fruits and sporting a powerful surge of acidity.

The grapes come from a pair of Atlantic-adjacent sites in the Cambados area of the Salnés valley. Despite the supercharged acid impression here, the harvest was actually undertaken quite a bit later than the average for the zone. The reason for this is that Raúl likes to wait until the malic acid levels in the grapes go down enough to obviate the need for even partial malolactic fermentation (a practice far more prevalent in the Ríaz Baixas than back labels and tech sheets would suggest). The resulting must then ferments and ages in large, neutral French oak foudres. The oxygenation that occurs during this élevage gives the wine a softer, rounder entry that balances the razor-sharp acids that might otherwise render the wine shrill."
